Blueberry Oliebollen

Warm up this winter with one of our favourite treats, just add blueberries for fun twist.

Ingredients:

1 cup warm milk
1/2 cup warm water
2 tablespoon butter
2 eggs
1/4 cup sugar + teaspoon sugar
1 teaspoon active dry yeast
1/4 teaspoon salt
3/4 cup fresh or Frozen Klaassen Farms Blueberries
2-2&1/2 cup flour
Oil for deep-fat frying
Icing sugar

Instructions:

1.) In a large bowl dissolve yeast in warm water. Add 2 teaspoon sugar and let stand for a few minutes. Add the milk, butter, salt, eggs and remaining sugar. Then add the flour. Enough flour to form a thick batter. Stir in fresh blueberries.
2.) Cover batter and let rise until doubled. Heat oil to 375 degrees F.
3.) Heat the oil in a deep pan or frying pan. Use 2 metal spoons to shape scoops of dough into balls. Drop them carefully into the hot oil. Fry until golden brown on both sides. (2-3 min. on one
side). Drain on paper towel.
4.) Dust with icing sugar before serving.
