Blueberry Date Energy Balls
10 Dates, pitted
1/4 cup raw almonds
1/4 cup raw cashews
1/3 cup Frozen Klaassen Farms Blueberries
1 tsp vanilla extract
1 tbsp. almond/peanut butter
2/3 cup Shredded coconut unsweetened
Optional: decorative candy eyes
- Process the nuts, dates, vanilla, and almond butter in the food processor.
- Then add frozen blueberries and process again until well blended.
- Wet your hands a bit and roll mixture into balls. If the mixture is too wet place in fridge for 1-2 hours to firm up
- Remove from fridge and roll in the coconut.
- Add decorative candy eyes.
