Haloumi Burgers with Blueberry Red Onion Relish and Basil Aioli


1 large handful fresh basil
2 egg yolks
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 cup virgin olive oil
1/2 cup vegetable oil


1 red onion, diced
1 cup Klaassen Farms blueberries
½ cup brown sugar
2 Tbsp balsamic vinegar
½ tsp Sea salt


4 brioche buns
4 Haloumi patties (or four generous slices of Haloumi)
Mixed greens



  1. Start by making the relish: simply add all the ingredients to a small skillet over medium heat and cook down until the onions are completely soft and the mixture is thickened. Set aside to cool.
  2. To make the aioli, blend all the ingredients in a food processor or blender until thick and smooth. Refrigerate until ready to use.
  3. To fry the haloumi, add a generous splash of olive oil to a skillet over medium-high heat and fry the haloumi patties until golden brown on both sides. Drain on paper towels before assembling the burgers.
  4. To assemble, spread the basil aioli generously on both buns. Add a haloumi patti first, followed by the blueberry relish, some crisp greens, and finally the top bun. Serve immediately.
