Haloumi Burgers with Blueberry Red Onion Relish and Basil Aioli
BASIL AIOLI INGREDIENTS:
1 large handful fresh basil
2 egg yolks
1 tablespoon lemon juice
1/2 teaspoon kosher salt
1/4 cup virgin olive oil
1/2 cup vegetable oil
BLUEBERRY RELISH INGREDIENTS:
1 red onion, diced
1 cup Klaassen Farms blueberries
½ cup brown sugar
2 Tbsp balsamic vinegar
½ tsp Sea salt
TO ASSEMBLE:
4 brioche buns
4 Haloumi patties (or four generous slices of Haloumi)
Mixed greens
INSTRUCTIONS:
- Start by making the relish: simply add all the ingredients to a small skillet over medium heat and cook down until the onions are completely soft and the mixture is thickened. Set aside to cool.
- To make the aioli, blend all the ingredients in a food processor or blender until thick and smooth. Refrigerate until ready to use.
- To fry the haloumi, add a generous splash of olive oil to a skillet over medium-high heat and fry the haloumi patties until golden brown on both sides. Drain on paper towels before assembling the burgers.
- To assemble, spread the basil aioli generously on both buns. Add a haloumi patti first, followed by the blueberry relish, some crisp greens, and finally the top bun. Serve immediately.
