Blueberry Coconut Mojito 


1 cup sugar
1/2 cup water
1 cup fresh or frozen Klaassen Farms Blueberries
Handful fresh mint


White rum
Coconut cream
Soda water/sparkling water
Fresh mint leaves
Lime wedges
Blueberries for garnish


  1. In a small saucepan, bring the sugar, water, and blueberries to a boil and cook until the sugar is fully dissolved and the blueberries have burst and released all their juices. Take off the heat and stir in the mint leaves. When the syrup has cooled completely, strain into an airtight container.
  2. Add ice to tall highball glasses, followed by 1oz of white rum, 1 oz of the blueberry mint syrup, and 1oz of coconut cream. Top with sparkling water and garnish with mint, lime, and more blueberries.
