Ingredients:

  • 1 1/2 cups sugar
  • 1/2 cup oil
  • 2 eggs
  • 3/4 cup buttermilk
  • 1 1/2 smashed bananas
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • 1 cup fresh or frozen Klaassen Blueberries
  • 2 1/3 cups flour

Instructions:

  1. Preheat oven to 350 degrees F. Lightly grease 2 bread loaf pans. Set aside.
  2. Beat sugar, oil and eggs with a hand mixer until well blended. Add buttermilk, salt, vanilla and smashed bananas. Then slowly add all dry ingredients to the batter. Mix well. Add blueberries with a spatula. Place batter into the two loaf pans. Put a few floured Blueberries on top of the batter so they won’t sink to the bottom.
  3. Bake for 1 hour or until toothpick comes out clean. Let banana bread cool in pans for 10 minutes, then turn out onto a wire rack. Top with lemon glaze if desired.
