Ingredients:
- 1 1/2 cups sugar
- 1/2 cup oil
- 2 eggs
- 3/4 cup buttermilk
- 1 1/2 smashed bananas
- 1 teaspoon baking soda
- 2 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla
- 1 cup fresh or frozen Klaassen Blueberries
- 2 1/3 cups flour
Instructions:
- Preheat oven to 350 degrees F. Lightly grease 2 bread loaf pans. Set aside.
- Beat sugar, oil and eggs with a hand mixer until well blended. Add buttermilk, salt, vanilla and smashed bananas. Then slowly add all dry ingredients to the batter. Mix well. Add blueberries with a spatula. Place batter into the two loaf pans. Put a few floured Blueberries on top of the batter so they won’t sink to the bottom.
- Bake for 1 hour or until toothpick comes out clean. Let banana bread cool in pans for 10 minutes, then turn out onto a wire rack. Top with lemon glaze if desired.
