Ingredients:
- 1 cup frozen Klaassen Farms Blueberries
- 1 cup full fat Greek yogurt
- 1/4 cup honey
- 2/3 cup lemon curd
- 2/3 cup whipping cream
- 2/3 cup granola
Instructions:
- Place the frozen blueberries and half the honey into a small saucepan and heat gently until the blueberries are totally thawed and simmering in their own juices. Transfer to a bowl and place in the fridge to cool.
- In the meantime, whip the whipping cream in a mixer until stiff peaks form. Using a spatula, gently fold in 1/3 cup of lemon curd a little at a time.
- Mix the remaining honey into the Greek yogurt.
- Layer your ingredients in glasses or jars as follows: Yogurt, lemon curd, blueberries, lemon cream, granola.
- Repeat as necessary to fill the glasses, finishing with any leftover lemon cream.
