  • 1 cup frozen Klaassen Farms Blueberries
  • 1 cup full fat Greek yogurt
  • 1/4 cup honey
  • 2/3  cup lemon curd
  • 2/3 cup whipping cream
  • 2/3 cup granola


  1. Place the frozen blueberries and half the honey into a small saucepan and heat gently until the blueberries are totally thawed and simmering in their own juices. Transfer to a bowl and place in the fridge to cool.
  2. In the meantime, whip the whipping cream in a mixer until stiff peaks form. Using a spatula, gently fold in 1/3 cup of lemon curd a little at a time.
  3. Mix the remaining honey into the Greek yogurt.
  4. Layer your ingredients in glasses or jars as follows: Yogurt, lemon curd, blueberries, lemon cream, granola.
  5. Repeat as necessary to fill the glasses, finishing with any leftover lemon cream.
