Blueberry Oatmeal + Buttermilk Waffles

When it comes to delicious brunches, waffles have got to be at the top of our list. Obviously, when we crack out the waffle iron we make sure to incorporate Chilliwack Blueberries into our recipes! Our frozen Duke blueberries add the perfect pop of fruity sweetness to these fluffy waffles, and the addition of oatmeal adds texture and taste to an otherwise ordinary batter.

INGREDIENTS

2 cups buttermilk

1 cup rolled or quick oats

1.5 cups all purpose flour

1 tsp baking powder

.5 tsp baking soda

2 eggs

¼ cup melted butter

1 tsp vanilla

1 cup frozen Chilliwack Blueberries

DIRECTIONS

Pour the buttermilk over the oats and let sit for 10-15 minutes while you prepare the other ingredients.

Preheat your waffle iron. Whisk eggs, butter, and vanilla into the buttermilk and oats, then add the dry ingredients and stir gently to combine. When you can’t see big lumps of flour anymore, carefully fold in the blueberries.

Grease the waffle iron to prevent sticking, then use a ladle or a ? cup measure to add the batter, and follow the manufacturer’s directions to cook your waffles. Keep them warm in a low oven while you finish cooking all the batter.

Serve immediately with fresh whipped cream and maple syrup.
