Blueberry Parfaits with Whipped Lemon Cream

Today we’re sharing a delicious recipe you can make with your frozen Chilliwack blueberries all year round- these incredible Blueberry Parfaits with Whipped Lemon Cream.

Layers of rich Greek yogurt, sweet blueberries, tart lemon curd and light lemon cream are stacked into glasses with just a little crunchy granola. The result? Heaven for breakfast.

Prep Time: 15 mins
Yield: 2 Large Parfaits

 

INGREDIENTS:

1 cup frozen Chilliwack blueberries

1 cup full fat Greek yogurt

1/4 cup honey

2/3  cup lemon curd

2/3 cup whipping cream

2/3 cup granola

 

DIRECTIONS:

Place the frozen blueberries and half the honey into a small saucepan and heat gently until the blueberries are totally thawed and simmering in their own juices. Transfer to a bowl and place in the fridge to cool.

In the meantime, whip the whipping cream in a mixer until stiff peaks form. Using a spatula, gently fold in 1/3 cup of lemon curd a little at a time.

Mix the remaining honey into the Greek yogurt.

Layer your ingredients in glasses or jars as follows: Yogurt, lemon curd, blueberries, lemon cream, granola.

Repeat as necessary to fill the glasses, finishing with any leftover lemon cream.
