Ingredients:

  • 4 Naan or turkish flatbread
  • 1 1/2 cups of Klaassen Farms Blueberries
  • ½ cup sugar
  • Juice of one lemon
  • 1 cup good quality blue cheese
  • 4-6 slices of thick cut bacon
  • Sliced almonds
  • Pea shoots
  • Local liquid honey

Instructions:

  1. Chop the bacon and cook until crisped- set aside to drain on paper towels.
  2. Cook the blueberries, sugar, and lemon juice until the blueberries have burst and the mixture has thickened. Mash the berries slightly with a fork or potato masher.
  3. Place the flatbreads on a large tray and toast in a 400 degree oven for 3-4 minutes, until they are lightly crisped and heated through.
  4. Working quickly, spread each flatbread generously with the blueberry reduction and sprinkle ¼ cup of blue cheese over each one. Top with bacon, almonds, and a big drizzle of honey before finishing with some fresh pea shoots. Serve immediately.
