Crust Ingredients:

  • 1 ¾ cups graham wafer crumbs
  • ¼ cups white sugar
  • ½ cups melted butter or margarine

Crust Instructions:

  1. Mix all the ingredients in a bowl and press into a 9 x 13 glass pan

Filling Ingredients:

  • 5 eggs
  • 1 ¼ cups white sugar
  • 2 tsp vanilla
  • 12 oz cream cheese (1 ½ packages at room temperature)

Filling Instructions:

  1. Place the cream cheese in a mixing bowl. Beat until smooth. Add vanilla. Slowly add white sugar. Add eggs one at a time while continuing to mix.
  2. Gently pour the filling over graham wafer crust. Bake at 350 F for 20-30 min or until the filling is slightly browned and firm in the center.
  3. Cool on the counter.

Blueberry Topping Ingredients:

  • 2 cups frozen Klaassen Farms blueberries
  • ¼ cup water
  • 1/3 cup sugar mixed with 3 tbsp corn starch

Blueberry Topping Instructions:

  1. Add blueberries and ¼ cup of water in a saucepan. Bring to a boil. Slowly add the sugar and cornstarch mixture until the sauce thickens. Remove from heat and let it cool slightly.
  2. Gently pour over cooled cheesecake and place in the fridge for several hours. Cut and serve.
