Crust Ingredients:
- 1 ¾ cups graham wafer crumbs
- ¼ cups white sugar
- ½ cups melted butter or margarine
Crust Instructions:
- Mix all the ingredients in a bowl and press into a 9 x 13 glass pan
Filling Ingredients:
- 5 eggs
- 1 ¼ cups white sugar
- 2 tsp vanilla
- 12 oz cream cheese (1 ½ packages at room temperature)
Filling Instructions:
- Place the cream cheese in a mixing bowl. Beat until smooth. Add vanilla. Slowly add white sugar. Add eggs one at a time while continuing to mix.
- Gently pour the filling over graham wafer crust. Bake at 350 F for 20-30 min or until the filling is slightly browned and firm in the center.
- Cool on the counter.
Blueberry Topping Ingredients:
- 2 cups frozen Klaassen Farms blueberries
- ¼ cup water
- 1/3 cup sugar mixed with 3 tbsp corn starch
Blueberry Topping Instructions:
- Add blueberries and ¼ cup of water in a saucepan. Bring to a boil. Slowly add the sugar and cornstarch mixture until the sauce thickens. Remove from heat and let it cool slightly.
- Gently pour over cooled cheesecake and place in the fridge for several hours. Cut and serve.
