Ingredients:
- 2 1/4 cups all purpose flour
- 1 cup unsalted butter (room temperature)
- 1 1/2 cups icing sugar
- 1 teaspoon baking powder
- 3/4 cup chopped pecans (toasted)
- 1/2 teaspoon salt
- 1/4 teaspoon vanilla
- 2 tablespoon granulated sugar
- 2 cups Klaassen Farms Blueberries
- Zest of a half lemon
Streusel Ingredients:
- 1/4 cup butter
- 1/2 cup flour
- 1/2 cup sugar
Instructions:
- Preheat Oven to 350 F. Grease a 9×13 inch pan.
- Stir together the flour, pecans and salt and set aside
- With a hand mixer on medium high beat the butter and icing sugar until
- fluffy, add vanilla.
- Reduce the mixer to low and add the dry ingredients mixture.
- Transfer mixture to the pan. Press firmly into the bottom. Top with blueberries. Stir together sugar and lemon zest and sprinkle on top of the blueberries.
- Make a Streusel/crumble from sugar, flour and butter and crumble over the blueberries.
Bake for 50 min. Let cool for 15 minutes and enjoy!
