Ingredients:

  • 1/4 cup shortening
  • 3/4 cup sugar
  • 1 egg
  • 2 cup flour
  • 1/2 cup coconut milk
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 cup Klaassen Farms Blueberries
  • 1/2 cup sugar
  • 3/4 cup flour
  • 1/4 cup butter (melted)

Instructions:

  1. Preheat oven to 375*F
  2. In a mixer with paddle attachment, cream shortening and sugar until fluffy.
  3. Add egg and mix until combined.
  4. In a separate bowl mix together flour, salt and baking powder.
  5. Add dry ingredients alternating with coconut milk until just combined, then add blueberries.
  6. Pour batter into a greased 8×8 pan.
  7. In a separate bowl, mix sugar, flour and butter until crumbs form. Top batter with crumble.
  8. Bake for 45-55 mins or until crumble is golden brown.
