Blueberry Pecan Bars
2 1/4 cups all purpose flour
1 cup unsalted butter (room temperature)
1&1/2 cups icing sugar
1 teaspoon baking powder
3/4 cup chopped pecans (toasted)
1/2 teaspoon salt
1/4 teaspoon vanilla
2 tablespoon granulated sugar
2 cups Klaassen Farms Blueberries
Zest of a half lemon
1/4 cup butter
1/2 cup flour
1/2 cup sugar
1.) Preheat Oven to 350 F. Grease a 9×13 inch pan.
2.) Stir together the flour, pecans and salt and set aside
3.) With a hand mixer on medium high beat the butter and icing sugar until fluffy, add vanilla.
4.) Reduce the mixer to low and add the dry ingredients mixture.
5.) Transfer mixture to the pan. Press firmly into the bottom. Top with blueberries. Stir together sugar and lemon zest and sprinkle on top of the blueberries.
6.) Make a Streusel/crumble from sugar, flour and butter and crumble over the blueberries.
7.) Bake for 50 min. Let cool for 15 minutes and enjoy!
