By September 18, 2020Blog

1 1/2 cups sugar
1/2 cup oil
2 eggs
3/4 cup buttermilk
1 1/2 smashed bananas
1 teaspoon baking soda
2 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon vanilla
1 cup fresh or frozen Klaassen Blueberries
2 1/3 cups flour

1.) Preheat oven to 350 degrees F.
Lightly grease 2 bread loaf pans. Set aside.
2.) Beat sugar, oil and eggs with a hand mixer until well blended. Add buttermilk, salt, vanilla and smashed bananas. Then slowly add all dry ingredients to the batter. Mix well. Add blueberries with a spatula. Place batter into the two loaf pans. Put a few floured Blueberries on top of the batter so they won’t sink to the bottom.
3.) Bake for 1 hour or until toothpick comes out clean. Let banana bread cool in pans for 10 minutes, then turn out onto a wire rack.
Top with lemon glaze if desired.
